Apple Cake Cobbler

This is a recipe that my grandmother created. It’s a wonderful and old fashioned apple cobbler. The greatest part about this dish, besides its taste, is the fact that it travels really well. It’s great for picnics and anywhere else you want to take it.

Ingredients -

     3 cups flour
     1 cup white sugar, divided
     1 1/2 teaspoons baking powder
     1/2 teaspoon kosher salt
     1/2 cup butter
     2 large eggs
     1 tablespoon pure vanilla extract
     3 tablespoons whole milk
     8 cups baking apples, thinly sliced, peeled
     2 tablespoons quick-cooking tapioca
     1 tablespoon whole milk
     3/4 teaspoon white sugar
     1/4 teaspoon ground cinnamon

 
Preparation:
    1. Combine the flour, 1/4 cup sugar, baking powder and salt in a bowl.
    2. Cut in the butter until it is crumbly.
    3. Lightly beat the eggs and vanilla in another bowl.
    4. Add to the crumb mixture.
    5. Using a fork, gently mix in the milk to moisten.
    6. Stir until the dough forms a ball.
    7. Press half of the dough into the bottom of a greased 13-in. x 9-in. x 2-in. baking pan.
    8. Chill the remaining dough.
    9. Toss the apples with the tapioca, cinnamon and remaining sugar.
    10. Place over the dough in the baking pan.
    11. On a lightly floured surface, roll the chilled dough to fit the top of the pan.
    12. Place over the apples.
    13. Brush with milk.
    14. Combine sugar and cinnamon and sprinkle on top.
    15. Bake at 350 degrees for 45-50 minutes or until apples are tender and crust is golden.

If you want a cobbler that is more light and fluffy, try sifting the flour before you add it to the mixture.

When baking with apples, you want to make sure you pick the best apples for the dish. I really like to use Gala apples when I make cobbler. Try alos McIntosh and Jonagold apples for the best cobbler!
